Thassos is full of olive groves as the olive tree is considered a blessed tree in this place, since every part of it is used for a reason. Its fruit is eaten or used to produce fine olive oil and its leaves can be used as food for the animals. The olive groves of our company are located north and south of the island. In the northern part of the island, on mountain slopes, where we let the trees grow without human intervention (watering-fertilizing). This is how we manage to maintain the variety of wild olive trees of Thassos. On the south side, our olive groves are located on the flatlands of the island, where their irrigation is diligently carried out through irrigation systems during the summer months, in order to give the maximum quality of their fruits.

Extra virgin olive oil is what is obtained exclusively by natural (mechanical) methods from the olive fruit without chemical refining intervention. Especially the extra virgin refers to the highest category of olive oil, which is distinguished for its low acidity, low number of peroxides and oxidation markers and the absence of taste defects.
The officially recognized action of olive oil concerns the protection against the oxidation of LDL cholesterol and is due to the class of phenolic substances. Thanks to these substances, olive oil protects the cardiovascular system. However, a number of beneficial characteristics have not yet been officially recognized, but there are already many experimental data with very strong indications. For example, Oleokanthal has been found to inhibit platelet aggregation and clot formation in healthy people and may inhibit Alzheimer's disease and rheumatoid arthritis. It has also recently been found that through a special mechanism it can quickly kill cancer cells without damaging the healthy ones. Oleiacein, which is the most powerful antioxidant in olive oil, has similar but less powerful characteristics.
In a chemical analysis carried out at the National and Kapodistrian University of Athens in 2013 by Assistant Professor P. Magiatis of the Department of Pharmaceuticals and Chemistry of Natural Products, it was found that olive oil from Thassos is of high quality because Oleokanthal and Oleiacein is at double quantity than the average of other samples of olive oil. Anti-inflammatory, antioxidant, heart protective and neuro-protective properties have been attributed to these substances.

The standardization and preparation methods that areused by our company are fully compliant with the ISO 22000 system. Quality Management and Food Safety is fundamental to any job performed by the company's staff on a daily basis. The uniformity of the working methods is achieved by applying specific procedures and work instructions for each critical activity, which affects the safety or the quality of the products. The management, at regular intervals, reviews the Food Quality and Safety Management System, in order to ensure its continuous suitability and effectiveness. The results of the reviews are recorded, and the conclusions and possible suggestions are monitored for their implementation, to improve the system.

The certification of organic oils and olives is done by the European Certification Organization A-cert, which with annual inspections and controls, both in the production and standardization areas and in the files and invoices, decide and give the certification to those who are drafted with the authorities of organic farming.
